In Prospect, Kentucky, rising river levels typically force businesses to close. However, Captain's Quarters takes a unique approach. Instead of bracing for floodwaters, this family-owned restaurant, a community fixture since 1986 on a century-old restaurant site, proactively fills its building with clean water. This strategy proved effective just last month when the Ohio River rose 11 feet inside, minimizing damage and enabling a swift reopening – just in time for Derby weekend.
